Cheeseburger-Stuffed Bell Peppers

Who said you can’t enjoy your favorite foods while losing fat, beating cravings and enjoying more energy throughout your days?

As a foodie health practitioner, I love this flavor-rich, low sugar impact recipe for “cheeseburger”-stuffed bell peppers. It’s one of my clients’ favorites to date too!

The variety of whole food stars in this recipe make it not only a delicious meal, but one that is packed with waist-slimming fiber and protein, free-radical-fighting antioxidants and immune-boosting vitamin C just to name a few.

Scratch the cheeseburger itch in a much healthier way with this yummy recipe.

CHEESEBURGER-STUFFED BELL PEPPERS
Yield: 4 servings
INGREDIENTS —
1 pound 90% lean ground beef
4 bell peppers
1 red onion, minced
8 cloves garlic, minced
1 cup canned black beans, drained
4 ounces canned diced tomatoes, drained
1 cup cheddar cheese, separated (swap for avocado, if dairy-free)
1 tablespoon hamburger seasoning (use a clean store bought spice blend or make your own with the recipe below)
Avocado oil spray
Homemade Hamburger Seasoning Recipe:
2 tablespoons paprika
2 tablespoons garlic powder
1½ tablespoons pink Himalayan sea salt
1 tablespoon onion powder
1 tablespoon dried parsley
½ tablespoon ground black pepper
½ tablespoon dried basil
2 teaspoons cumin
2 teaspoons chili powder
1 teaspoon mustard powder
⅛ teaspoon cayenne

INSTRUCTIONS —
1. Preheat oven to 475° and lightly spray a baking dish (one that has an oven-safe top) with avocado oil spray

Cut tops off the bell peppers and carefully remove the membranes/seeds.

3. Place the peppers in the prepared baking dish arranged about 2 inches apart and place the tops back on the empty peppers.

4. Cover the baking dish with its top and bake peppers for 15 minutes, then remove from the oven (but leave the oven on) and set aside.

5. Spray a skillet with avocado oil spray and heat.

6. Once heated, sauté the minced onion and garlic until translucent and fragrant (~3-5 minutes).

7. Add the ground beef and seasonings and fully cook.

8. Stir in tomatoes, and beans and cook 3 to 4 minutes until heated through, stirring occasionally.

9. Remove pepper tops and add filling.

10. Bake at 475° F for 8-10 minutes or until bell peppers are near your preferred tenderness.

11. (skip this step is omitting the cheese) Top with cheese and put peppers back in the oven one final time. Once the cheese has melted, remove from the oven and carefully serve.
